Nicole is a Registered Dietitian Nutritionist, 200-hour Registered Yoga Teacher, and an expert environmental / environmental justice educator and policy consultant. She is a graduate of Rutgers University, where she earned a B.A. in African American Studies & Sociology, a M.A. in Political Science, and was a Graduate Fellow with the Eagleton Institute of Politics.

In addition, Nicole holds a B.S. in Nutrition & Food Science from Montclair State University. She is a 2016 recipient of the Rising Star Award from the NJ Work Environment Council (NJWEC) and a Class of 2016 Senior Fellow with the Environmental Leadership Program (ELP). Nicole has been a featured panelist at several events, conferences, and invited guest on local media to discuss the topics of environmental justice, environmental policy, and sustainability. She has been an active member of the League of Women Voters of New Jersey (LWVNJ) since 2014, and served on their board of directors from 2019 – 2020.

With over a decade of experience in public engagement and education, she specializes in educating adolescents to adults on a variety of sustainability-related topics, including those at the intersection of nutrition and the environment, such as Food Justice and Food Literacy.

Nicole is an active member of the Academy of Nutrition & Dietetics (AND), Nutrition Entrepreneurs DPGNJAND and the Black Yoga Teachers Alliance. Her yoga teacher training includes a total of 230 hours completed with Yinside Yoga and I&I Yoga. As of 2022, Nicole left Newark, NJ for South Bend, IN where she consults in Assisted Living, Long-term Care & Rehab populations as an IN Licensed Dietitian. Additional state licensure applications are pending in Ohio & Illinois. Her private practice is set to open a physical office location in Northern Indiana in Fall 2023 , though she is currently available and provides nutrition and yoga services locally & remotely to international clientele.

(EcoEmpress.Co) believes in the parallels between nature and human health, and the importance of making that connection relevant to the lives of everyday people. We believe that caring for our bodies and valuing our health is directly linked to caring for our planet and being in harmony with the environment.

Human-impacted climate disruption and environmental pollution are considered among the greatest concerns of the 21st century. This is directly related to food, as in the cases of drought and food shortages, food production methods, and the international transport of food. More and more consumers are motivated to invest in products and services that they see as part of the solution. They want to make more informed decisions, positively impact the world, and avoid chronic illness.

We offer complimentary support in maintaining health and managing stress by focusing on meeting clients where they are, empowering them to make a valuable and lifelong positive changes for their health and wellbeing.
